Gluten free pancakes with broccoli

Pancakes Broccoli in the oven, free of gluten!

Another way to try broccoli. And another way for your kids to eat broccoli, if they are not even tempted to try it.

The recipe includes corn flour, which is gluten-free. A solution for those who have intolerance or other problems with this ingredient.

Also, our pancakes are baked in the oven, not in the pan.

 

Ingredients

1 small broccoli

1 leek

1 onion dry

4-5 sprigs of parsley

300gr Feta cheese

100gr corn flour

3 tbls of almonds

2 egg whites

½ tsp of sugar

1 tsp of soda

Olive oil

Salt, pepper

 

Yogurt Dip

200gr yoghurt

1 garlic fresh

1 tomato

Parsley or coriander 

 

Method

Boil the broccoli so that it remains crisp. Remove it from water and let it cool down.

On non-stick pan sauté onion (chopped), in a minimum of olive oil, until it is tender.

Then, in one bowl, mix cornflakes, almonds, soda, sugar, pepper and salt.

There, add the finely chopped vegetables, the sautéed onion, the broccoli cut into small bunches and the feta cheese grated.

Our mixture is ready. We make small pancakes with our hands and put them in a baking pan on which we have already laid greaseproof paper.

Smoot each pancake with olive oil.

Bake in the air heater for about 20 minutes at 180° C until it gets golden color.

 

In the meantime, we prepare the yogurt dip.

 

Chop the tomato into cubes by removing the seeds and slurry the garlic.

Mix all ingredients with yoghurt.

Finally, add 2 tablespoons of olive oil.

Serve the pancakes warm along with the dip!
