“Super”-colored Macarons

Recipe for super-colored macarons.

We will need:

  • 250 gr. almond powder (ground almond kernels)
  • 350 gr. of powdered sugar
  • 8 egg whites (medium eggs) at room temperature (at least for 1 hour)
  • 1 pinch of salt
  • 150 gr. crystal sugar (2 times ground)
  • For blue color:
  • For pink color:
  • For purple color:
  • For red color:


  1. Put the almond kernels together with the powdered sugar in the bowl of the mixer (use the cutters) and grind them well until there are no lumps. Then sieve them through a sieve into a bowl.
  2. Pour the crystal sugar into the bowl of the mixer and grind it until it becomes thin.
  3. In another bowl, toss the egg whites with a pinch of salt and beat on medium speed until white. Immediately, add the crystal sugar together with 1 dessert spoon of the color and beat until it becomes a meringue.
  4. Put the meringue in the bowl with the almond kernels and powdered sugar. Use a mariz spatula and with gentle movements stir from bottom to top, taking care not to lose the volume of our meringue, until there are no almond grains.
  5. Then, add them to a pastry cone. We put non-stick paper on our plates and form our macaroni with the cornea (approximately 5cm circles). Be careful to leave 2-3cm distance between them. Once we finish forming the macaroni, let them rest at least for 25 minutes.
  6. Preheat your oven to 140 degrees C in the air and bake for 15 minutes. When the first 5 minutes have passed, open the oven until all the steam is gone. Check the bottom of the macaroni, which should be soft. If the bottom is hard, then reduce the cooking time to the next dose by 2-3 minutes.
  7. Finally, leave them until they have cooled well. For the filling we can use different ingredients, such as jams, chocolate praline, creams, etc. Fill the filling in pairs and then join them like a sandwich.

Secrets for sure success:

A perfect macaroni should be soft, fluffy, smooth and crunchy. Below you will find the secrets to achieve this.

  • The perfect macaroni, you also need the perfect shape: To achieve the perfect shape, you can draw the shape on the non-stick paper with a cutter and so all the macaroni will have a uniform shape.
  • Attention to detail: Emphasize detail, weighing and measuring all materials accurately. Follow the instructions faithfully.
  • Environment plays a role: Humidity, dryness and heat can affect the final result. To achieve the perfect macaroni, avoid as much humidity in the atmosphere as possible.
  • The perfect color: To achieve the perfect color, dilute the powders in a little water.
  • Cleanliness is everything: The bowl in which we beat the meringue must be perfectly clean and not contain a trace of the previous preparation, as well as, a trace of moisture, as mentioned above.
  • Gentle movements play a role: As we pointed out in step 4 of the execution, the movements we make must be gentle because otherwise we will lose volume.
  • Patience for the perfect surface: You need to let the macaroni rest for at least 25 minutes. Also, when they are cooked, you must leave them in the pan until they cool completely, otherwise there is a risk that they will dissolve.



Frequent mistakes:

  1. Cracked surface: If your macaroni has a cracked surface, then you probably hit them more than you should or did not let them rest before cooking.
  2. Hollow or very soft macaroni: If your macaroni came out hollow, then you probably hit the mixture more than you should or the temperature of your oven was higher. If your macaroni came out very soft, then probably the temperature of your oven was too low or they need a little more baking.
  3. Macaroni does not come off: If the macaroni does not come off the oil paste, then they probably need more baking or you have to wait for it to cool so that they stabilize.
