Vegan crepes with Quinoa flour and Spicy Tomato Sauce

Crepes are among of those meals that "integrate" many variations, combinations of ingredients and serving. Here's a special recipe based on quinoa and buckwheat flour, that will replace wheat flour.





  • 100g quinoa flour
  • 50g buckwheat flour
  • 2 eggs beaten (optional)
  • 300ml almond milk
  • 20g vegetable butter (melted)
  • Sunflower oil or seed to toast



  • 1kg cumin seeds
  • 2h olive oil
  • 1 onion (cut into thin slices)
  • 1 red pepper (chopped)
  • 1 green pepper (chopped)
  • 2 gl garlic (smashed)
  • 2 tbsp. paprika
  • 1 large saffron pinch
  • 1 pinch of cayenne pepper
  • 400g preserved tomatoes
  • 1 bunch of coriander, the leaves, chopped



  • 250ml soy flavor
  • 2 tbsp harissa
  • 1 tsp lemon juice
  • 1 gl garlic (melted)
  • 1 tsp olive oil
  • 1 bunch of chopped parsley





  1. Sift the flour and mix in a bowl, along with a pinch of salt. At this point, if you want add the eggs and mix them with the flour.
  2. Continue to pour the milk and melted butter, mix and set aside for 30 minutes.
  3. We use a large bench for our crepes and with a few drops of sunflower oil each time we bake our crepes in medium heat. Remember, it takes no more than 1-2 times each side, and to keep warm you can have the oven preheated to 100ºC and place one on top of the other by inserting an oil paste.



  1. In the meantime, make the sauce using a large saucepan, where without oil, saute the cumin seeds on medium heat. Stir constantly until they begin to release their flavouring.
  2. Add olive oil, onion and sauté for about 5 minutes. Then pour in the peppers. Sauté for 3 more minutes and toss the tomatoes. If necessary, grind the cherry tomatoes with a wooden spoon.
  3. When the sauce boils we lower the heat and boil for 20 minutes. Mix with salt and pepper and finally mix with the chickpeas.


Yogurt Harissa

We just mix our materials, yogurt, lemon, garlic and parsley and leave in the fridge.



How to serve

Enjoy the two-spoon crêpes from the spicy tomato sauce in the center of each side, accompanied by the yogurt - harissa blend. The combination of the spicy sauce with the cool and delicious blend of yogurt will completely satisfy you!
