Coconut milk has proven to be a good substitute for cow's milk. With an adaptation to the recipe you can achieve an excellent result in anything dairy you make. Here we present an easy recipe for making ice cream with coconut milk, which you can enrich with any other ingredient you like.
Ingredients
2 cans full-fat coconut milk
1/2 cup honey or agave nectar
1/4 teaspoon salt
2 tablespoons cornstarch
1 1/2 teaspoons vanilla extract
Let's make the ice cream
- Shake the coconut milk containers thoroughly before opening. First, fill half a cup of milk.
- Put the remaining milk in a saucepan along with the honey (or agave syrup) and salt. Boil for about 2' until our sweetener begins to thin and mix well with milk.
- In a small bowl, whisk the remaining ½ cup of milk with the cornstarch until it ties well.
- Pour your mixture into the saucepan with warm milk stirring it parallel.
- Heat it in moderate heat until your mixture begins to thicken, for 6-8 minutes. Do not let the mixture boil.
- Just before you remove the pot from the fire, add the vanilla.
- Immediately after removing the pot from the fire, place the mixture in a bowl and allow to cool for 30'.
- Cover it with a lid and leave it in the freezer for one night.
- Accompany it with chocolate and almond chips.
