Smoked Salmon & Egg poached
A nice, fast and hearty mid-meal, for those who love the egg, spinach and their combination.
Ingredients
Olive oil
Fresh chives
10g of smoked salmon
1 big egg
80g spinach
1 thick slice of whole grain bread
1 tsp cream cheese
1 lemon
Method
On a flat surface we place an ecological membrane (non PVC) of 40 cm and smear with some oil.
Chop little fresh chives and apply it to the middle of the membrane.
Then cut the salmon and place it on the membrane and carefully break an egg onto your fillet.
Bring the corners of the membrane towards the center and gently remove the air around the egg. Wrap the membrane and tie a knot.
Place the pack in a shallow pot with boiling water for about 6 to 7 minutes.
As the egg squeezes, put a dripping utensil over the saucepan and put the spinach to wither.
Bake the slice of bread and spread with soft cheese.
Remove the excess liquids from the spinach and spread it on the bread.
Make sure you remove the egg from the saucepan at the right time, unwrap the membrane and put the egg on the bread.
Serve it with a lemon wedge and some pepper, if you like it!
