Salad with chickpeas, chicken & avocado

Here is a nice recipe that combines pleasantly three very tasty ingredients: chickpeas, chicken and avocado.

For the nutritional and flavor properties of avocado we have spoken. However, it remains a fruit that many have not yet put in their nutrition and may not know how to choose it.

It is simple. Avocado is good to be ripe if we want it for immediate consumption. Since we feel soft in our hands, then it's okay.

If it is relatively unripe, as we do with all the fruits, leave it out of the fridge in the paper bag and use it when it's soft.

If you see it again yellowed with black marks then it is not suitable for consumption.

Remember: As a salad, the recipe for its preparation is resilient. We can add any kind of ingredients we like.

Ingredients

Quantity for 6 people

  • 150 gr . chicken fillet
  • 100 gr . chickpeas
  • 1 avocado
  • 1 dry onion
  • 1 small bunch of parsley or coriander
  • 1 lemon juice
  • 1 bay leaf
  • Olive oil
  • Cumin
  • Salt - Pepper

 

Method

Soak chickpeas overnight and the other day boil them with bay leaf until soft.

Boil the chicken and cut it into slices.

Chop the onion and coriander, and cut the avocado into slices.

 

Put all the ingredients in a deep salad, mix and add cumin, salt, pepper and a little bit of lemon zest.

Finally, add lemon juice and olive oil and enjoy your salad!
