The miraculous 'kombucha'

There is a "live" tea with a long history, relatively unknown in our country, which has literally miraculous qualities and in the past few years it has gained more and more friends. Its name "compuce" and comes from the distant Far East, with a history of 2,000 years.

In fact, we are not talking about tea, but about a yeast that grows in a solution of black or green tea and sugar with "yeast". Compuce is considered an elixir of longevity as it is an ideal drink for detoxifying the body and strengthening the immune system.

 

A great tonic for the body

Through the fermentation process probiotics and other nutrients are released, which we will briefly present. This drink contains many vitamins such as B1, B2, B6, B12 that act tonic to the body, help the nervous system and help in the transformation of fats and proteins. Vitamins C, known to enhance the immune system, are also found in large quantities.

It also contains several organic acids such as lactic acid regulating digestive function, glucuronic acid having detoxifying properties, acetic acid that suppresses pathogenic microorganisms and butyric acid that protects the intestinal walls.

Other important substances found in compotes are amino acids, which are structural components of the proteins from which vital enzymes are produced.

The relevant literature provides several beneficial properties in computations such as: 

     • Detoxification of the liver and kidneys.
     • Adjustment of metabolism and weight loss.
     • Relieve eczema and asthma.
     • Dealing with constipation.
     • Improved digestion.
     • Better appearance on the skin and hair.
     • Combating insomnia.


How do I consume it and how much?

Of course, if you have an illness, it is advisable to consult your doctor. Consumption should be avoided for children under 4 years of age and for women who are pregnant or breastfeeding.

It is best to start gradually, to get used to your body and avoid some side effects such as diarrhea. In the first week you can drink half a glass a day and increase the dosage every week.

To make your drink yourself, the first one you will need is a clean fungus, green or black tea and sugar. For two liters of water we will put a concoction crop, 2 to 4 spoons of black or green tea or a mixture of both as well as a little less than a cup of sugar.

Put the water to boil, remove it from the fire and add the tea. Once left for 15 minutes, remove the leaves, pour the sugar and stir. Once the mixture has cooled down, put it in a distilled jar, adding the compote. Care must be taken to cool the water so that the fungus is not killed.

Then pour a little less than a cup (200 ml) of the prepared liquid butter or, if you do not have, two tablespoons of distilled vinegar. Cover the surface of the pot with a towel or a towel and leave it for a few days in a warm and dark place.

After the second day you will see a thin film formed in the liquid, which means that the fermentation proceeds normally. After the fourth to the fifth day you can try to see if it has happened. The drink should be neither sweet nor sour. If it's sweet, it takes a little longer, and if it's sour, the process went on longer than it should be.

When the drink is ready, put it in bottles while you remove and kiss for the next few years the old and new fungi. Do not forget to keep about a cup of liquid as a yeast for the next drink.
